Blueberry Lemon Overnight Oats

“Grab N Get Your Butt Out The Door Overnight Oats”

Breakfast made easy and done the night before!

No need to rush in the morning trying to prepare a nutritious breakfast {because IT IS super important to fuel yourself in the AM} when you can have these overnight oats waiting in your fridge ready to eat.

This recipe is packed with HEALTHY FATS…PROTEIN…ANTIOXIDANTS and not to mention so many options for different flavour combinations.

I LOVE citrus, I use lemon juice and zest whenever I can. This overnight oats recipe is sweet, satisfying and exploding with flavour! I have made so many different combinations and always go back to blueberry lemon.

**NOTE** Use plain greek yogurt, this is because sugar is hiding in A LOT of flavoured yogurt and it’s really easy to avoid added sugar and to sweeten with honey. Next time you are at the grocery store, turn your products around and look at the INGREDIENT list. You will see sugar as the second or third ingredients in a lot of yogurt, avoid buying those and add your own sweetness.

Oatmeal Base:

1/3 cup large rolled oats
1 tbsp chia seeds
¼ cup Plain Greek yogurt
½ cup almond milk {coconut, rice, or hemp milk works too}
1 tbsp honey {I used buckwheat, has a stronger flavour}

Handful of blackberries or blueberries
1 tbsp shredded coconut
1/2 tsp lemon zest {optional}

Combine oatmeal ingredients and mix in the bottom of a mason jar until combined. Then add toppings, screw on the lid and store in fridge overnight. Mix and enjoy in the AM.

More Flavour Combinations To Try:

  1. Pineapple, coconut
  2. Strawberry, peanut butter
  3. Orange, chocolate {using cacao or cocoa}
  4. Banana, Almond
