Healthy Muffin Recipe

So Fast & Easy! I call them no excuse muffins 🙂

Is there really anything better in the morning than a good cup of coffee and delicious muffin? The answer is…YES! There IS something better,  a good cup of coffee{bullet proof style} and HEALTHY, delicious muffin, homemade with whole food ingredients. Forget Tim Hortons and all the questionable ingredients in pre made muffins, make your own baked goods and feel good bout what you fuel your body with.

I love trying a recipe that uses one small appliance like a blender or food processor, no muss, no fuss!
When a recipe is this simple, there really is NO excuse to not make your own food and avoid a trip to the drive through or bake section of the grocery store.

:Let’s Get To It:

Recipe: Yields 12 regular sized muffins
*2 cup oats {for gluten free, use gluten free oats from Bob’s Red Mills}
*3 Speckled bananas
*2 Organic eggs
*3/4 Cup of pitted dates
*1 Tsp baking soda
*Sprinkle of nutmeg and cinnamon {optional, but not really ;)}
*1 Tsp of PURE vanilla extract{optional}
*Sprinkle of Enjoy Life chocolate chips {optional}

-Preheat oven to 350
-Grease a muffin tin
-Mix all ingredients in food processor and mix until smooth.
-Pour batter into muffin tins and top with chocolate chips.
-Bake for 15-20 minutes, until toothpick comes out clean. Store in fridge for up to 3 days.

I enjoyed these muffins by themselves and with a little nut butter. The best recipes are the one’s you want to make over and over, I hope you enjoy them as much as we did.

    Hi, these sound yummy but do you have the nutritional breakdown per serving, like fat and sugar content? I have to watch the amount of fat and sugar I eat, being a gastric bypass patient. Thanks in advance!

      Thank you for reading! The nutrition info is:
      Per 1 Muffin: 124 Calories, 1.7G Fat, Sugar is 13.1g (natural occurring) Protein is 3.3g

        Thanks so much, it is helpful. The sugar is a bit too high but I wasn’t planning on adding the chocolate chips, so that will make it lower. Can’t wait to try them!

    Hi, I tried these muffins, they really are so moist and yummy! I didn’t use the chocolate chips, I only made half the recioe and put them in mini muffin tins and they are perfect for me as a serving size and per fat and sugar content for me being a gastric bypass patient. Thank you so much!
    I will freeze them too.
