One Bowl Pumpkin Spice Muffins

Tastes like fall!

 

Who doesn’t love pumpkin spice and everything nice?
Not to mention, a recipe where everything is combined in one bowl, for easy clean up and easy prep..can I get an AMEN! 

These muffins are simple, delicious and only whole food ingredients…with a few chocolate chips sprinkled in. Parents, this is a great dessert for the kiddies.

Health Benefits of Pumpkin:

-High in beta carotene
-High in fiber, helps to keep us fuller for longer
-High in carotenoids, helps protect and keep skin youthful

Ingredients: Enough to make 12 delicious muffins

  • 1 cup almond flour/meal
    {you can make your own by processing blanched almonds, found at bulk stores}
  • 1 cup canned pumpkin
  • 2 eggs {organic if possible} 
  • 1/4 cup almond butter
  • 1/4 cup honey
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 1 tsp vanilla extract 
  • 1/2-3/4 cup chopped walnuts
  • roughly 1/4 cup of chocolate chips {optional…kind of hahah}

Directions:

  1. Preheat oven to 350
  2. Combine all ingredients in one bowl, Mix well until fully combined.
  3. Scoop into paper lined muffin tin or greased muffin tin.
  4. Bake for 32-35 minutes, when using a convection oven, 32 minutes was perfect!
  5. Let cool {I know, waiting is the worst} serve and enjoy <3
